Chickpea Avacado Salad
Ingredients:
- 3 Tbsp extra virgin olive oil
- 3 Tbsp lemon juice
- 1 pressed and minced garlic clove
- Salt to taste
- 1/8 tsp black pepper
- 1 halved and sliced green capsicum
- 15 oz cooked chickpeas
- 1/2 chopped onion
- 1 sliced avocado
- ½ tsp roasted and crushed coriander seeds
- 4-5 steamed broccoli florets
Instructions:
- Add the olive oil, lemon juice, garlic, coriander seeds, salt, and pepper to a bowl and whisk to make the dressing.
- Combine the remaining ingredients in a salad bowl.
- Drizzle the dressing to taste and toss to coat.
- You can drizzle some white sauce or cream to enhance the taste.
Licious Lentil Soup
Ingredients:
- ⅓ cup masoor dal
- ¼ cup yellow mung dal
- 2 tsp oil
- ½ tsp jeera seeds
- ½ tsp mustard seeds
- a generous pinch of asafetida omit if you do not have gluten-free asafetida to make gf
- 1 finely chopped green chilli
- 1 cup chopped onion
- 1 tsp ginger garlic paste
- 1 tsp ground coriander powder
- ½ tsp turmeric powder
- ¼ tsp red chili powder
- 1 chopped tomato
- 1 tsp lemon juice
- Water
- Salt to taste
- Freshly chopped coriander leaves
Instructions:
- Wash and drain the lentils.
- Add water and let it cook for 18 to 20 minutes.
- Heat oil in a pan and add the jeera seeds and mustard seeds. Once they change color and get fragrant, add asafoetida, green chili, onion, ginger garlic paste, and a pinch of salt. Cook until translucent.
- Add coriander, turmeric, chili powder and mix well.
- Add tomatoes, lemon juice, and a tbsp of water and mix. Cook and mash until saucy.
- Add the cooked lentils to the pan, add salt to taste, and continue to simmer for 5 mins.
- Garnish with chopped coriander leaves and serve hot.
Stir-Fried Veggies
Ingredients:
- 1 tbsp olive oils
- 1 sliced red bell pepper
- 1 sliced yellow bell pepper
- 1 cup sliced French beans
- 1 cup artichokes
- 2 cups broccoli
- ½ cup chopped onions
- ¼ cup soy sauce
- 3 minced garlic cloves
- 3 tbsp brown sugar
- 1/2 cup vegetable broth
- 1 tbsp corn flour
- 1 tsp sesame oil
- chopped green onions and sesame seeds for garnish (optional)
Instructions:
- Heat olive oil over medium heat in a large pan.
- Add bell peppers, broccoli, artichokes, french beans, and onions and sauté for 2-3 minutes until the veggies are almost tender.
- In a small bowl whisk together the soy sauce, garlic, brown sugar, sesame oil, vegetable broth, and cornstarch.
- Pour it over the veggies and cook until the sauce has thickened.
- Garnish with chopped green onions and sesame seeds if desired
