How to Cook Buckwheat: Top Healthy Buckwheat Recipes

Grown throughout the United States, Buckwheat is a grain-like seed and a pseudocereal. It consists of similar properties to that of cereals but does not belong to the grass family like most other cereals. Buckwheat is loaded with a variety of healthy nutrients like protein, fiber, and healthy complex carbohydrates.   

Buckwheat as an ingredient can be used in several food items, such as breakfast recipes, flour, and noodles.

Buckwheat Bread (Kasha)

Ingredients:

  • ¼ cup of kasha
  • ⅓ cup of boiling water
  • 1 cup of buckwheat flour
  • 1 cup of all-purpose gluten-free flour
  • ½ cup of brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp xantham gum
  • ½ tsp salt
  • ½ cup of buttermilk
  • ½ cup of cream
  • 1 egg
  • ¼ cup of oil
  • ½ cup of walnuts

Procedure:

  • In a bowl, boil some water.  Soak the kasha in boiling water. Let it rest for 15 minutes.
  • Grease a loaf pan. Preheat the oven to 350 degrees C.
  • In another bowl, mix all the dry ingredients thoroughly. 
  • In another bowl, whisk the eggs, cream, and oil until smooth.
  • Add the kasha and the walnuts into the egg mixture. Stir well. 
  • Add the dry ingredients mixture to the wet ingredients mixture.
  • Spread the mixture evenly in the pan and bake for 50 minutes or till the tester comes out clean.
  • Serve and enjoy with your choice of side dish!

Buckwheat Pancakes

Ingredients:

  • 2 eggs (yolks separated)
  • ¾ cup of skimmed milk
  • 2 tbsp plain yogurt
  • ½ cup of buckwheat flour 
  • ½ cup of rice flour 
  • 1 tbsp cornmeal
  • ½ tsp baking powder
  • Salt to taste
  • Unsalted butter
  • Honey

Procedure:

  • In a mixing bowl, beat the egg yolks, milk, and yogurt until smooth.
  • In another bowl, sieve buckwheat flour, rice flour, cornmeal, baking powder, sugar, and salt.
  • Add the milk mixture to the flour mixture and stir slowly. Add oil and mix well.
  • In another bowl, beat the egg whites till stiff and fold into batter.
  • In a frying pan, melt butter.  Pour a large spoon of the batter. Cook over low-medium heat till the pancake turns slightly golden on both sides.
  • Serve hot with honey!

Buckwheat Blini

Ingredients:

  • ½ cup of buckwheat flour
  • ½ cup of wheat flour
  • 1 ½ tsp active dry yeast
  • 1 ½ cups of milk
  • 1 tsp sugar
  • Salt to taste.
  • 2-3 tbsp butter (melted)
  • 2 eggs ( yolks separated)
  • 1 cup of sour cream
  • Few sprigs of dill leaves

Procedure:

  • In a pot, heat the milk and pour it into a bowl. Add sugar and yeast. Let it rest for 5 minutes.
  • In a mixing bowl, sieve the flour and salt.
  • Add the milk to the flour mixture and mix well till it becomes a thick batter. Add the melted butter and cover the bowl with a cling film. Let it rest for 2-3 hours at room temperature. 
  • Now, the batter should be double in size. Stir it slightly.
  • In a bowl, beat the yolks and mix them into the above batter. In a separate bowl, beat the egg whites until stiff and slowly fold into the batter.
  • Heat a non-stick pan and grease the surface with a little batter. Take a ladle of the batter and place it at the center of the pan and spread it out in circular motion.
  • Cook both sides for 2-3 minutes until they turn golden brown. Repeat the process with the remaining batter.
  • Serve it hot and fresh with a dollop of sour cream and a dill sprig!

Buckwheat Brownie Cake

Ingredients:

  • 125 gm compound dark chocolate
  • 75 gm butter
  • 1 cup of brown sugar
  • ¾ cup of buckwheat flour
  • ¼ cup of cocoa powder
  • ½ tsp baking powder
  • 2 eggs
  • ¼ cup of warm milk (if needed)
  • ½ cup of walnuts (chopped)
  • 2 tbsp cacao nibs

Procedure:

  • Pre-heat the oven at 100 degrees C for 5 minutes. Grease a baking tray with oil. Place a butter paper and keep it aside.
  • In a bowl, melt the chocolate and butter. Mix thoroughly to combine well.
  • In another mixing bowl, whisk the eggs thoroughly. Add sugar and whisk well.
  • Add the chocolate mixture and mix well.
  • Sieve cocoa powder, buckwheat flour, and baking powder together. Add to the wet batter slowly and fold well.
  • In a teaspoon of wheat flour, toss the walnuts and cacao nibs. 
  • In the baking tray, pour the chocolate batter and add the walnuts and cacao nibs.
  • Bake in the oven for 20 minutes at 150 degrees C until firm on the outside. The inside will remain a little gooey.
  • Let it cool. Cut them into the desired shape and size.
  • Serve and enjoy!
