Samosa

Ingredients:

  • 2 cups flour Danfe Maida flour
  • 4 tablespoons ghee
  • 1 teaspoon salt
  • 1 teaspoon caraway seeds
  • Water (as needed)
  • 4 large potatoes, peeled and diced
  • 1 cup peas
  • 3 tablespoons oil
  • 1 tablespoon ginger, minced
  • 1 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • Optional: additional spices or herbs of your choice

Procedure:

  • In a large bowl, combine Danfe maida flour, ghee, salt, and caraway seeds until the mixture resembles breadcrumbs. Gradually stir in enough water to form a firm dough. Knead on a lightly floured surface for 6-8 minutes until smooth and elastic. Cover and let rest for 1 hour.
  • Place potatoes in a saucepan and cover with water. Bring to a boil, then reduce heat and cook until just tender, 8-10 minutes. Drain and let cool slightly.
  • In a skillet, heat 3 tablespoons of oil over medium heat. Add potatoes and cook until they start to cling to the skillet, about 5 minutes. Stir in peas, ginger, garam masala, cumin seeds, and salt. Cook for 2 minutes. Set aside.
  • Divide dough into 6 pieces. Roll each piece into a 10×6-inch oval. Cut each oval in half. Moisten one edge with water, fold to form a cone, and seal the seam. Fill with 3-4 tablespoons of the potato mixture. Moisten the curved edge of the dough, fold over the top of the filling, and press to seal. Flatten the bottom of each samosa slightly. Repeat with the remaining dough and filling.
  • Preheat the air fryer to 350°F. Brush samosas with the remaining oil. Cook in batches in a single layer in the air fryer for about 15 minutes, or until golden brown.

Indian Spiced Chickpea Wraps

Ingredients:

  • 1 tablespoon oil
  • 1 onion, diced
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1 pack Danfe Kabuli Chana, drained and rinsed
  • 1 cup diced tomatoes
  • 4 tortillas
  • 1 cup fresh spinach

Procedure:

  • In a large skillet, heat oil over medium-high heat. Sauté onion until tender, about 2 minutes. Add ginger, garlic, and seasonings. Cook until fragrant, about 1 minute. Stir in Danfe Kabuli Chana and tomatoes. Bring to a boil, then reduce heat and simmer for 5-8 minutes until slightly thickened.
  • To serve, place spinach and chickpea mixture on tortillas. Top with pineapple raita and roll up. This recipe is a perfect example of healthy food for your friends that is both delicious and nutritious.

Curry Lentil Soup

Ingredients:

  • 1 cup Danfe Moong Dal
  • 4 cups vegetable broth
  • 2 tablespoons curry powder
  • 3 cloves garlic, minced
  • 1 cup coconut milk
  • Salt to taste
  • Green onions for garnish

Procedure:

  • In an oven, combine Danfe Moong dal, broth, curry powder, and garlic. Bring to a boil, then reduce heat.
  • Stir in coconut milk. Simmer uncovered for 25-30 minutes, until lentils are tender. Season with salt to taste.
  • Garnish with green onions before serving. Optionally, serve with a lime wedge and chopped peanuts or cashews for added crunch.

Semolina Cake With Oranges

Ingredients:

  • 2 bay leaves
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 2 tablespoons lemon juice
  • 1 cup Danfe Sooji Flour
  • 1 cup Danfe Indian sugar
  • 1 teaspoon baking powder
  • 1 tablespoon orange zest
  • 1/2 teaspoon cardamom
  • 1/4 cup butter, melted
  • 1 cup plain yogurt
  • 1/2 cup milk
  • 2 oranges, peeled and sliced

Procedure:

  • In a small saucepan, simmer bay leaves, sugar, salt, and 1/2 cup water until sugar dissolves, about 5 minutes. 
  • Remove from heat, stir in lemon juice, and let cool. Discard bay leaves.
  • Preheat the oven to 350°F. Butter a 9-inch cake pan. In a medium bowl, whisk Danfe Sooji Flour, sugar, baking powder, orange zest, cardamom, and salt. 
  • In a large bowl, mix yogurt and milk. Combine with dry ingredients and melted butter. Pour batter into the prepared pan. 
  • Bake for 55-65 minutes, until golden brown. Cool in the pan for 10 minutes, then invert onto a plate. Poke holes in the cake and pour all but 1/4 cup of the syrup over it. Let soak for 30 minutes.
  • Combine orange slices with remaining syrup and let sit for at least 20 minutes. Serve cake with oranges in syrup.

Chickpea & Potato Curry

Ingredients:

  • 1 tablespoon oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 can diced tomatoes
  • 1 pack Danfe Kabuli Chana, drained and rinsed
  • 2 potatoes, diced
  • 1 cup vegetable stock
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Procedure:

  • In a large skillet, heat oil over medium-high heat. Sauté onion until tender, about 2-4 minutes. Add garlic, ginger, and seasonings; cook for 1 minute. Stir in tomatoes and transfer to a slow cooker.
  • Add Danfe Kabuli Chana, potatoes, and stock to the slow cooker. Cook on low for 6-8 hours until potatoes are tender and flavors are blended.
  • Stir in lime juice and sprinkle with cilantro. Serve with rice, and optionally, red onion and lime wedges.
