Lemon-Coriander Drizzle Christmas Cake

Ingredients 

  • 3 cups Danfe Durum Wheat Semolina Flour
  • 1 tbsp Danfe Coriander Seeds, Crushed
  • 1tsp Baking Powder
  • 2 cups Caster Sugar
  • ½ cup Granulated Sugar 
  • 4 tbsp Melted Butter, Unsalted
  • Zest and Juice of 2 Lemons
  • 1 cup Whole Milk
  • 3 Eggs

Instructions

Step 1: Preheat the oven to 350°F. Then, lightly grease a 9×5 non-stick loaf pan and line it with parchment paper.

Step 2: In an electric stand mixer, beat the butter and caster sugar together. Add one egg at a time until you get a light and fluffy mixture. 

Step 3: Now, gently fold in the lemon zest, Danfe’s durum wheat semolina flour, and baking powder. Next, slowly add the milk until the batter has a dropping consistency. 

Step 4: Spoon the batter into the loaf pan and bake for 60 minutes. Do a cake test at the end by inserting a toothpick into the center, and pull it out. The toothpick should come out clean except for a few crumbs. 

Step 5: Now it’s time to make the coriander syrup! Heat a small pan over low heat.

Step 6: Add granulated sugar, Danfe coriander seeds, and lemon juice. Simmer for 10 minutes until you have a 2 string consistency and strain. 

Step 7: When the cake is done, take it out of the oven, and drizzle the syrup on top. Let it cool. Then transfer to a plate, add some sugar crystals and the remaining lemon zest on top. 

Step 8: You’re done! Enjoy this ultra-easy Christmas cake with a hot cup of cocoa or tea, or by itself!  

Hot Chocolate Christmas Cookies

You know the times when you used to have a cup of hot cocoa on a chilly winter night sitting by the fireplace and soaking in the magical night.

Ingredients 

  • 2 cups Danfe’s Maida (All-Purpose Flour)
  • ⅔ cup Cocoa Powder
  • 1 tsp Baking Soda
  • 2 tsp Vanilla Extract
  • ½ tsp Salt
  • ¾ cup Butter, Room Temperature
  • ¾ cup Packed Dark Brown Sugar
  • ¾ cup Granulated Sugar
  • 2 Eggs
  • 19 Marshmallows
  • 1 cup Chocolate Chips

Instructions

Step 1: Preheat the oven to 350ºF. In the meantime, line a cookie sheet with parchment paper and set aside. 

Step 2: In a medium mixing bowl, whisk together Danfe’s maida/all-purpose flour, cocoa powder, baking soda, and salt. 

Step 3: In an electric stand mixer, beat the butter, granulated sugar, and packed dark brown sugar together on medium-high speed until you get a light and creamy mixture. 

Step 4: Slowly add the eggs and vanilla extract, scraping down the sides until everything is mixed evenly. 

Step 5: Combine the wet and dry ingredients. Lastly, add the chocolate chips and mix until everything is evenly combined. 

Step 6: Take a 1-inch scoop, scoop the batter, and place it on the cookie sheet. Make sure to place the dough balls 2 inches apart. 

Step 7: Bake for 8-10 minutes until the sides are crispy and the center is just set.

Step 8: Carefully take the pan out of the oven and gently place a marshmallow in the center of each cookie. 

Step 9: Pop the pan back in the oven and bake for 1-2 minutes until the marshmallows are soft. 

Step 10: Remove the pan from the oven and let it cool for 5 minutes. Then, using a metal spatula or just your oven mitts, transfer the cookies to a wire rack and let them cool completely. 

Step 11: As an optional step, you can chop some leftover chocolate chips and sprinkle them on top. 

Step 12: Enjoy these festive Christmas cookies by itself, with some ice cream, or with milk!

Whole Wheat Gingerbread Christmas Cookies

  • ½ cup Powdered Sugar
  • 2 tsp Gingerbread Spice 
  • 3 tbsp Honey
  • 1 Egg
  • ½ stick Butter, Unsalted and Room Temperature
  • ½ tsp Baking Soda
  • Sprinkles and Icing for decoration

Instructions 

Step 1: In a bowl, mix together Danfe’s whole wheat flour, powdered sugar, and baking soda. Set aside. 

Step 2: In an electric stand mixer, beat together butter, egg, and honey on medium speed. Switch to low speed and slowly add in the flour mixture until just combined. 

Step 3: Divide the dough into two equal pieces in the shape of a ball. Wrap the balls in plastic wrap and refrigerate for at least 2 hours or overnight. 

Step 4: Once the dough is chilled, roll it out. Using your cookie cutters, cut the dough into whatever shapes you like. Re-roll the scraps and repeat until you use up all the dough. 

Step 5: Preheat the oven to 350ºF. 

Step 6: Line a cookie sheet with parchment paper. Transfer the cut-out dough to the cookie sheet. 

Step 7: Bake for 8-10 minutes. Once the timer goes off, take out the cookie sheet from the oven and let it cool for 5 minutes. 

Step 8: Then, carefully transfer the cookies to a wire rack and let it cool completely. 

Step 9: Once the cookies are room temperature, decorate them with icing, candies, or sprinkles. 

Step 10: Serve and enjoy these super easy, healthy Christmas cookies immediately. Or you can store them in a tightly sealed container for up to 4 days. 

Buttery Christmas Shortbread Cookies

  • ½ cup Cornstarch
  • 1 tsp Vanilla Extract
  • Icing and Sprinkles for decoration

Instructions

Step 1: Line a cookie sheet with parchment paper. 

Step 2: In a mixing bowl or electric stand mixer, beat the butter, sugar, and vanilla extract together until they’re light and fluffy. 

Step 3: Slowly add Danfe’s maida/all-purpose flour and cornstarch and stir until well combined. 

Step 4: Lightly flour your kitchen counter. Form the dough into a ball, and knead it until it’s smooth. Then form it into a ball again and flatten it out into a flat disk. 

Step 5: Roll out the dough. Using your cookie cutters, cut the dough into desired shapes. Re-roll the scraps and repeat until you use up all the dough. 

Step 6: Transfer the cut-out shapes to the cookie sheet and pop it in the refrigerator for at least an hour or overnight. 

Step 7: When you’re ready to bake, preheat the oven to 350ºF. Take the cut-out shapes out of the refrigerator, and place them in the oven. Bake for 12-16 minutes or just until the edges turn golden brown. 

Step 8: Rotate the pan halfway through for even browning. Once the timer goes off, take it out of the oven and let it cool for 5 minutes. Then transfer them to a wire rack to cool completely. 

Step 9: Now it’s time for the fun part. Take out your icing, sprinkles, and candy to decorate these decadent Christmas cookies (optional). If you’re not a fan of icing, you can enjoy them just the way they are.
