- 1 ½ cup of Danfe’s Maida Flour

- ½ tbsp of Danfe’s Cumin Seeds
- ¼ tbsp of turmeric powder
- ½ tbsp red chilli powder and coriander powder
- Pinch of asafoetida (hing)
- ½ tbsp of fennel seeds
- Oil and Salt
Instructions
- Prepare Kachori dough by taking 1 cup of Dafe’s Atta flour and Danfe’s Maida Flour, a little bit of salt, and baking powder. Mix and add ghee to the mixture.
- Begin to knead the dough by adding ⅓ cup of water as required. Cover the dough with a moist cloth and let it rest.
- Start preparing the filling for the Kachori. Blend the soaked Danfe’s Urad dal to make sure the mixture is not a paste.
- Add ½ tbsp of Danfe’s Cumin seeds and some ghee in a pan. Add in chopped ginger and chilli. Sauté together at medium heat.
- Add turmeric along with red chilli powder and coriander powder. Next, add a pinch of asafoetida and fennel seeds.
- Add the urad dal paste to the mixture along with salt for taste. Cook it until the mixture thickens. Once the mixture cools down, make it into small balls.
- Prepare dough balls, roll them into a circle, and add the urad dal ball by covering the dough. Seal the edges properly and roll it again with the filling inside.
- Deep fry the kachori and serve it with some spicy tamarind chutney.

Instructions
- Cook the rice and set it aside along with some lemon juice.
- In a pan, add sesame oil along with Danfe’s Mustard seeds. Once the seeds crackle, add Danfe’s Masoor Dal and fry until golden brown.
- Sauté the chopped chillies, and curry leaves on medium heat and sprinkle a pinch of asafetida.
- Turn off the heat and add Danfe’s turmeric powder. Blend everything. Pour this mixture into the cooked rice.
- Add in fried peanuts and lemon juice along with salt to taste.
- Mix everything. While serving, garnish with cilantro.
Ven Pongal

Instructions
- Mix roasted Danfe’s Moong dal with rice and rinse it in water. Put it in the pressure cooker.

- Add in 3 cups of water and salt to taste. Cook for 15 minutes for 7-8 whistles. The consistency should be like a slurry.
- To prepare the dressing, in a pan add in oil, cumin seeds, and black pepper.
- Add in curry leaves and fry them until the leaves are crisp. Add this to the cooked mixture of rice and lentils.
- Mix and set them aside for the flavours to blend thoroughly.
- Serve it alongside curd or pickle.

- To make the syrup, in a pan add in jaggery powder and 3 tbsp of water.
- On low heat stir the mixture until the jaggery dissolves completely.
- Stir it continuously until the jaggery syrup comes to a softball stage. Turn off the heat and add in the roasted mixture.
- Mix everything together and make laddus when the mixture is still warm.
