Ingredients
- 2 ½ pounds of Green Beans
- Olive oil and Virgin Oil
- Sliced Onion
- Danfe’s Dill Seeds
- All-purpose flour
- Salt and Pepper
- 2 cups of Milk
- ½ cup of Shredded Cheese
Instructions
- Preheat the oven to 425°F by placing the racks in the upper and lower thirds of the oven.
- Coat the green beans with olive oil. Once done, roast it for 20-25 minutes until they are brown and tender.
- Heat the saucepan and pour in 1 tbsp of olive oil. Add sliced onion to it and cook it until golden brown. Next, add flour along with salt and pepper. Cook for a minute and then add milk by stirring constantly.
- Once the sauce has thickened and bubbled, turn off the heat. Remove the beans once done and preheat the broiler.
- In a baking dish, add half of the green beans and pour half of the sauce over it. Add the remaining green beans and sauce and spread it. Sprinkle it with some Danfe’s Dill seeds along with shredded cheese on the top.
- Place under the broiler and broil, watching closely, until the gratin is bubbling and beginning to brown on top. Wait for a few minutes before serving.
Lentil Oatloaf

- 2 oz Firm Tofu
- ½ cup of Finely ground Walnuts
- 2 tbsp of Barbecue Sauce and Dijon Mustard

- ½ tbsp thyme, sage and rosemary
- 1 cup of Cooked Danfe’s Masoor Dal Whole
- Soya sauce and oats
Instructions
- Preheat the oven to 190°C. Sear the onion, celery, and garlic and add a few drops of water. Cook it until tender for 5 mins.
- Crush the tofu in a bowl and add the prepared mixture along with the cooked Danfe’s Masoor Dal.
- Transfer the mixture to a parchment-lined loaf pan. Put some BBQ sauce on top.
- Bake it for 1 hour and serve hot.
Moroccan Black-Eyed Peas (Cowpeas)
This is traditionally served as an American New Year meal. It is a side dish that pairs well with braised collard greens and buttermilk cornbread or sweet potato buttermilk cornbread. It signifies good luck and prosperity for the coming year. Here’s how you prepare it.
Ingredients
- 1 pound dried Danfe’s Cowpeas
- 2 tbsp of unsalted vegetable broth
- 1 tbsp Tabasco sauce and dried parsley
- Paprika
- ½ dried thyme and oregano
- Black pepper
- Liquid Smoke
- Chives and Cilantro
Instructions
- Preheat the oven to 150 C. In a cooking pot, add Danfe’s cowpeas along with Tabasco sauce, dried oregano, parsley, paprika, and thyme.
- Add in the vegetable broth and make sure it covers all the ingredients. Bake it in the oven for an hour until it is tender.
- Once done, transfer the pot to a stove and cook it over medium heat. Stir occasionally until the broth thickens.
- Garnish it with chives and cilantro before serving.
Pecan, Hazelnut and Coconut Tart

For the Crust
- 1 cup of Danfe’s Maida Flour
- 2 tbsp of Confectioners’ sugar
- Ground Cinnamon
- ½ tbsp of Kosher Salt
- Unsalted Butter
- For the Filling
- 11 cups of toasted pecans
- ¾ cup of Hazelnuts
- Unsweetened Coconut Flakes
- Brown Sugar and Honey
- Heavy cream
Instructions
- Add Danfe’s Maida Flour, confectioners’ sugar, cinnamon, and salt in a food processor. Make sure to combine it well 8 to 9 times.
- Add in yoghurt and water until it can hold itself together properly.
- Press in the bottom and upsides of a 9-inch tart pan with a removable bottom. Freeze for 20 minutes.
- Preheat the oven to 350°F. Prick the crust with a fork and bake it until golden brown. Once done, let it cool on the wired rack.
- Increase oven temperature to 375°F. Add in the pecans, hazelnuts, and coconut over the crust. Make a glaze by combining sugar, honey, butter, cream, and salt. Pour it over the crust.
- Bake it for 15 minutes until brown and let it cool before serving.

Instructions
- To make the syrup, add sugar, honey, a pinch of salt, ground nutmeg, and water. Stir constantly until the mixture turns into a slurry.
- Add Danfe’s White Sesame Seeds to the mixture and stir it until the syrup turns caramel in colour.
- Check the temperature using a candy thermometer. Once it reaches 300°F, turn off the heat. Put in the vanilla extract and the butter.
- As the butter melts, add in baking soda and stir it. The mixture will swell due to stirring. Pour it on the baking sheet and spread it for cooling.
- It will take 20 minutes for the mixture to cool and harden. Once done, break it into squared-shaped pieces, and it is ready for snacking.
